The Workshop
Cancer and Nutrition: How Food Can Create the Optimal Terrain for Health is designed to educate participants on how to fortify health and improve the physical “terrain” through the preparation, cooking and eating of nutritional food. Food can be medicine.
Study after study shows that only 5–10 percent of cancer is caused by damaged DNA, while the remaining 90–95 percent is caused by poor diet and unhealthy lifestyles. Cancer is not a genetic disease, but instead a metabolic disorder that occurs in response to how we are feeding and treating our bodies and therefore our genomes.
In this workshop we will discuss and demonstrate the metabolic approach to cancer. Metabolism is the combination of physical and chemical processes that occur in the body to create the energy required to maintain life. Simply speaking, metabolism is how the body utilizes the food we eat to obtain energy. Thus, our metabolic approach to cancer is nutrition centered.
Dr. Nasha Winters has been studying and using this approach for cancer prevention and neutralization for over 25 years (with herself and her patients) with outstanding results. She will share with us the emerging science behind why food can make such a huge difference.
To help us translate that science into the meals that come out of our kitchen, Mayumi Tavalero, traveling cooking instructor, will provide the practical help that will help us use this information to improve both the quality and quantity of our lives.
The workshop will provide valuable and practical information for creating an anti-cancer biology within the body, thereby strengthening the body’s natural defenses against cancer. Included in the presentation is a cooking demonstration and taste-testing for lunch the recipes that were prepared in the demonstration.
Instructors
Nasha Winters, ND, FABNO, L.Ac, Dipl.OM, is the visionary and CEO of Optimal Terrain™. She works to educate clients, doctors, and researchers worldwide on how to apply integrative oncology philosophically and therapeutically. Passionate about nourishing, quality food and its implications in healing or poisoning the body while targeting many of the processes that drive cancer, she co-wrote The Metabolic Approach to Cancer with Jess Kelley, MNT.
Lecturing and attending oncology-centric conferences worldwide, Dr. Winters remains on top of cutting-edge research and exploring ways to manipulate the metabolic, cytotoxic, immunologic potential of the terrain of clients. Her work is based on her proprietary approach to analyzing labs, molecular profiles, epigenetics,

After embarking on her own journey to optimal health, Mayumi Tavalero is passionate about sharing her experiences with others, through cooking classes and lifestyle changes. She has been in the food industry for over 30 years, has worked as the director of a Bay Area Cooking School, and is currently a Certified Fitness Nutritionist.
